In Darktable’s Lighttable view, is there a way to filter or select only photos that have already been edited or modified?

Yes, using the collect images module on the left. Select 'history' from the left dropdown menu then double-click on 'altered' to show only those images which have been modified. Try Darktable's user manual page for a fuller explanation.
Additionally you can stack rules so you can narrow down searches, eg, by searching by a particular roll or folder and altered or unaltered.

Yes. In Lighttable, use the collect images module on the left and choose history from the dropdown, then select altered to display only images that have been modified. You can also combine this with other rules, such as filtering by a specific folder or film roll.
If you only want a quick selection of modified images in the current film roll, use the select module on the right: click select untouched, then invert selection. That will leave the edited images selected.
