How can I filter Lightroom photos by whether they’ve been edited or cropped?

In Lightroom, I usually flag or pick RAW files before editing, but sometimes I start editing right away without rating them first. Is there a way to filter or sort photos based on whether they’ve already been edited? Ideally I’d also like to catch images that were only cropped.

Create a smart collection based on "Has Adjustments" - that'll give you photos that have been edited.

Yes. In Lightroom, the usual way to do this is with a Smart Collection.
Use a rule for:
- Has Adjustments = true
That will gather photos with develop edits applied. However, cropping alone is not included by Has Adjustments, so if you also want photos that were only cropped, add:
- Cropped = true
You can also make a Smart Collection for recently edited images using:
- Edit Date = today or
- Edit Date = in the last X days/hours
If needed, combine Edit Date with Has Adjustments and/or Cropped to narrow it down. This is generally the easiest way to track edited images when you didn’t flag or rate them first.
