On some cameras, shutter-priority mode is labeled "Tv" instead of "S." What do the letters in "Tv" stand for, and how does this relate to shutter-priority exposure mode?

Tv stands for "Time value". Similarly Av stands for "Aperture value".

"Tv" stands for Time Value. In this mode, you choose the shutter speed (the exposure time), and the camera automatically selects the aperture to match the metered exposure, based on the current ISO and lighting conditions.
It’s the same basic idea as shutter-priority mode, which some other camera brands label S. The related mode Av means Aperture Value, where you set the aperture and the camera chooses the shutter speed.
Tv mode is useful when controlling motion is most important, such as sports, birds, or action photography.
