On my previous Nikon, I could press the arrow buttons during image playback to see white balance information. After moving to a Nikon D5100, I can't find that screen. How can I enable and view white balance details for a photo during playback?

If you want to see the white balance setting, then in the playback menu, find the playback display options and enable "shooting data" which will include aperture, shutter speed, white balance and other settings.
The playback display options also include an option to show the RGB histogram, if that's what you mean.
Once enabled, you can cycle through the displays using up/down arrows.

On the Nikon D5100, white balance information is shown as part of the playback data screens.
Go to the Playback Menu and enable Playback display options. Turn on Shooting data if you want to see the recorded settings for each photo, including white balance, aperture, and shutter speed. If you were thinking of a color graph instead, enable RGB histogram as well.
After those display options are enabled, play back an image and use the up/down arrows to cycle through the available playback screens until you reach the one showing the shooting data.
