I tried using a 128GB SanDisk Extreme SDXC card in my Canon EOS 500D, but the camera cannot format it and asks me to change the card. Does the EOS 500D support SDXC cards, or only older SD/SDHC types? If SDXC is not compatible, what card type and maximum capacity should I use for shooting RAW?

The Canon EOS 500D only accepts SD and SDHC cards, which go up to 32GB.
SDXC cards (which were only introduced in the same year the 500D was released) are not supported, so you're out of luck there.
