I have a Sony a6700 and an older 2015 MacBook running macOS Monterey 12.7. Sony’s software and current Lightroom versions don’t support this machine, but I’d like to keep using it for now. Is there RAW-processing software that can open a6700 files on Monterey 12.7? Also, would an older Lightroom version be likely to support this camera’s RAW files?

One of your best bets would be Darktable

according to this you need at least 4.6.1 from 2024 to support your camera
the same file states versions 4.8 drops support for macOS versions before 13.5
