I use AEB on my Canon 6D for exposure safety and HDR, usually as 3 shots such as -2, 0, +2 EV. For some scenes, especially longer exposures, I’d like a larger bracket like -3, -2, -1, 0, +1, +2, +3 EV.

Can the 6D be set to capture 5 or 7 bracketed exposures automatically, and is there also a way to change the bracket order for HDR workflows?

Yes you can. Refer pg 305 of the standard English manual.

Custom function C.Fn I-5 'Number of bracketed shots'
0: 3 shots (default)
1: 2 shots
2: 5 shots
3: 7 shots

FYI: C.Fn I-4 lets you change the sequence of brackets shots - this could be useful when creating HDR shots as the order of the photos is from lowest to highest exposure value.
0: 0 - + (default)
1: - 0 +
2: + 0 -
