In Photoshop’s Print dialog, there’s an option to preview a simulated paper white. Is there a way to see that same paper-white simulation in the full-size main workspace while editing, not just in the print preview?

Check your options in ViewProof SetupCustom...
You can tune the display options there.

Customize Proof Condition

To quickly toggle color proofing on/off choose ViewProof Colors. You could also use the keyboard shortcut ⌘ + Y or ctrl + Y.
