I’m editing a time-lapse sequence and need to change the exposure on about 1,000 images. Does Apple Aperture let you batch edit exposure across multiple files, and if so, how is it done?

Yes. In Aperture it's called lift and stamp. Apple have a video explaining how to do just that here.

Yes. In Apple Aperture, you can batch-apply exposure adjustments using Lift & Stamp.

Make the exposure correction on one image first, then use Lift & Stamp to copy that adjustment and apply it to the rest of the selected files. This is a common way to synchronize edits across a time-lapse sequence or other groups of similar images.

In short: Aperture does support batch editing for this task, and Lift & Stamp is the feature you want.
