I’m editing a time-lapse sequence and need to change the exposure on about 1,000 images. Does Apple Aperture let you batch edit exposure across multiple files, and if so, how is it done?

Yes. In Apple Aperture, you can batch-apply exposure adjustments using Lift & Stamp.
