I have a Canon 7D and a Nissin Di700 flash with HSS support. Can two Yongnuo YN-622C transceivers be used to trigger the Di700 remotely in high-speed sync, and are there any compatibility issues I should know about?

I have no experience with the Nissin Di700, but the YN-622C triggers can communicate high speed sync, so it should work.
However if this is your first/only flash, you might be better off returning the Di700 and getting a Di700A and the Nissin Air 1 Commander, so you'll have a built-in receiver, rather than using an add-on one. The Di700A is the same price as the Di700 on B&H. The YN-622s will give you more flexibility in what lighting gear you might want to add to your triggering system, but built-in receivers have the advantage that you don't need to worry about external triggers or additional batteries.

Yes—based on user reports, a pair of Yongnuo YN-622C transceivers should be able to pass Canon HSS signals to a Nissin Di700, so remote HSS is expected to work on a Canon 7D.
One important caveat: there was a report that the YN-622C-TX controller did not trigger Nissin flashes correctly at first, in either normal sync or HSS, until its firmware was updated. The standard YN-622C transceivers, however, were reported to work.
