I already own some Cokin Z and Hitech filters, including 100x150mm filters, and I may be able to get a Lee Foundation Kit. Will these filters physically fit in the Lee holder, or are the systems incompatible?

The short answer is yes. The 100mm filter size is common across the brands, but the parts in the actual holder system is not interchangeable. If you're really not sure, just bring a filter with you to the store and try it.

Yes. Lee, Cokin Z, and Hitech filters in the 100mm system are generally designed around the same filter width, so 100x150mm filters should fit in a Lee Foundation Kit holder.
The main compatibility issue is not the filter sheets themselves, but the holder system components. Adapter rings, holder parts, and other accessories are not necessarily interchangeable across brands.
If you want to be completely sure, the safest option is to take one of your filters with you and test it in the holder before buying.
