On my Canon 5D Mark III, when I switch to A+ mode I can’t choose a single autofocus point. Is this normal, and which shooting mode should I use if I want the camera to stay mostly automatic but still let me select the AF point myself?

A+ mode gives all control over to the camera... if you want control over something like focus point selection, then you need to use a different mode.
