I understand why a larger light source gives softer light, because it wraps more around the subject. But photographers also say that feathering the light can make the light look softer. Why is that? What is the theory behind using the edge of a softbox, beauty dish, or other modifier instead of aiming the center directly at the subject?

The technique is most easy to achieve with softboxes and beauty dishes because there’s a sharply defined edge to the modifier itself. That’s also why feathering light with most lighting brollies is less effective because they give a wide, less directional spread of light and the area of tonal transition is more gradual.
