I'm getting started in astrophotography and want to stack multiple exposures to produce a tracked-looking result without star trails, similar to what DeepSkyStacker does on Windows. I use macOS and would prefer not to run Windows in a virtual machine. What native or cross-platform options are available for Mac?

If none of the Mac native applications do what you want, you're probably going to have to consider somehow running Windows programs. Your question rules out running Windows in a virtual machine, but you could also try the following options:
