I want to create accurate color profiles for canvas prints. I know there are calibrators for monitors and printer profiling tools for paper, but is canvas printing handled differently? What hardware is typically used to profile a printer when printing on canvas?

It is the same process as any printer.
You simply need to print the sample and take measures with the hardware.

Canvas profiling uses the same basic printer-profiling process as paper. You print a target chart on the canvas, then measure the patches with a printer-profiling device to build an ICC profile.
So you generally need printer-profiling hardware/software rather than a special “canvas-only” calibrator. One community answer notes that the same process applies as with any printer media. Another reports that X-Rite recommended the i1Publish Pro 2 for this kind of work.
In practice, the key is that the device must support printer profiling by reading printed color patches; monitor-only calibrators are not enough. Also, because canvas has its own texture and surface characteristics, profiling that specific canvas/printer/ink combination is important for best accuracy.
