If lighting isn’t a concern, is there still a point where adding more extension tube becomes impractical or reduces image quality? For example, does very large extension effectively raise the working f-number enough to make diffraction a problem, or are there other limits? What factors determine how much extension is useful?

Yes, if I put 68 mm of tube (36+20+12) behind my 12-24 lens, I can't focus on a subject because the focus point is behind the front lens.
