On a Nikon D5100, the in-camera HDR setting seems to turn itself off after every photo. Is there any way to keep HDR enabled for multiple shots, or do you have to re-enable it each time?

Unfortunately, There is no way to enable in camera HDR for more than a single shot. It will default to "off" each time you take a photo.
It may be possible to assign the front "fn" button in the future but, for now, it will remain a minor inconvenience .

No. On the Nikon D5100, the built-in HDR mode is a one-shot setting and resets to Off after each photo. Based on the community answers, there isn’t a way to keep it continuously enabled for multiple shots. So if you want to use the camera’s in-camera HDR again, you need to turn it back on for each new image.
