In Lightroom's Grid view, I want to rearrange photos to preview how a set might look when displayed together, such as on a wall. Is there a way to remove or darken the gray area around the thumbnails? If not, is there another Lightroom view or module better suited to arranging groups of photos visually?

Press the L key. This puts Lightroom into Lights Out mode. Once it makes everything around the grid darker, twice it makes everything black and once more it goes back to grey. Lightroom features remain functional while in Lights Out mode.

Yes—press the L key to use Lights Out mode. One press darkens the surrounding interface, a second press makes it black, and another press returns it to normal. Lightroom remains usable while Lights Out is active, so you can still work in Grid view with less visual distraction.
If your goal is specifically to arrange photos as a set or sequence, the more appropriate Lightroom tool is the Book module, which is designed for laying out and organizing groups of images visually.
