I want to shoot a twilight “holy grail” timelapse with a Canon 77D and avoid standing by the camera in the cold. Ideally, I’d like to connect wirelessly from iOS or macOS, let the intervalometer run, monitor exposure/EV, and change ISO or shutter speed without interrupting the sequence. I don’t need live view, image review, or autofocus. Is there an app or other setup that can do this?

qDslrDashboard's "Auto Holy Grail" mode does bulb ramping from iOS over a wi-fi connection with your 77D. The iOS port of it is called ControlMyCamera and is a beta that requires TestFlight to install.
Bulb ramping is where the exposure settings are automatically adjusted between images in a timelapse sequence to maintain overall exposure in changing lighting conditions (e.g., sunset or sunrise).

Unfortunately, Magic Lantern does not yet have a build for the 77D, so you can't use its intervalometer with auto ramping features.
