I have a FLIR One thermal camera and it works well, but its measurement range tops out at about 100°C. Is there any filter or material that can reduce the infrared energy reaching the sensor so the camera could effectively measure hotter subjects, for example shifting the usable range upward to something like 200–300°C?

Not in the simple “subtract 200°C” sense. Filters don’t shift temperature readings by a fixed amount; they only reduce or block some of the infrared radiation reaching the sensor.
