I have two lenses from a Canon EOS Rebel XS film camera: a Canon EF 28-80mm f/4-5.6 II and a Sigma 100-300mm f/4.5-6.7. I'm considering a Canon EOS 40D and want to know if these lenses will work on it. If they do, will the APS-C sensor change how they behave compared with 35mm film?

Yes, those lenses will be compatible. The EOS Rebel uses the same EF mount lenses as the EOS digital SLRs.
