Which manual-focus lens mounts can be adapted safely to Canon 5D/6D full-frame DSLRs?

I want to use older manual-focus lenses on a full-frame Canon EOS body such as the original 5D or 6D. I tried a Pentax K-mount 28mm lens, but its mount/lever appears to interfere with the camera mechanism, so I do not want to risk damaging the mirror or shutter.
Which legacy SLR lens mounts are generally adaptable to Canon EF full frame, and are there any known exceptions or modifications needed for safe use?

The great thing about the Canon EF mount is that the register, the distance from the sensor to the mount is relatively short meaning you can add an adaptor and still have the correct distance for the adapted mount.
So apart from Canon's own line of manual FD mount lenses you can adapt pretty much any SLR lens to the EF mount. Far too many to list here. There is an entire message board over at fredmiranda.com devoted to alternative (mostly retro manual) lenses for DSLRs, with plenty of suggestions and sample images, I'd start by reading the FAQ:

Canon EF has a short flange distance, so many manual-focus SLR lenses can be adapted while maintaining infinity focus. In general, most non-Canon manual SLR mounts are adaptable to EF with a simple mechanical adapter.
A key exception is Canon FD: it cannot be adapted to EF with a simple passive adapter while keeping infinity focus.
From the answers here, Pentax K lenses can be used, but the auto stop-down lever may need to be removed or unscrewed to avoid interference. Olympus OM lenses are also commonly adapted and are popular on EF bodies.
The main caution is that full-frame DSLRs like the 5D/6D have larger mirror clearance requirements, so some specific lens designs or protruding levers/bayonet parts may still cause interference even if the mount is generally adaptable.
