I’m new to photography and I’ve read about combining several photos focused at different distances into a single image that is sharp across more of the scene. I believe this is done in post-processing rather than by a special lens. What is this technique called, and what software can be used to do it?

Yes, 'focus stacking' is a common technique these days. My Canon camera has a burst mode over a range of focus distances specifically to be used with this technique. There are systems in Photoshop and other applications that can do this automatically, though they might be weirdly named.
