I have several Olympus OM Zuiko lenses from my film days (28mm f/2.8, 50mm f/1.4, 50mm f/1.8, 100mm f/2.8) and would like to use them on a modern digital camera. I’m new to digital photography and want a simple way to get very good results without needing features like GPS. Is there a particular type of camera or mount that is best for adapting OM lenses? Also, will using an adapter reduce image quality, and how does sensor size affect how these lenses behave compared with 35mm film?

The short and simple answer: get any APS-C or full frame mirrorless camera, they're all good. APS-C is cheaper, full frame if you don't want the "built in" 1.5-1.6x crop factor of APS-C.
Why mirrorless? Because they have a short registration distance, and can therefore be used with a glassless adapter, meaning essentially no image quality degradation.
