The iPhone 6 uses a dual-LED "True Tone" flash. Do the two LEDs have published color temperatures, or does the phone vary them automatically? Also, are there common lighting situations that would fall outside the flash's adjustment range?

There is no single fixed color temperature, the so called true tone flashis using an alghorithm to assess the current lightning conditions and adjust the color temperature of the two LEDs accordingly.
I'm not aware of any way to switch it off or control it manually, if you believe /r/jailbreak it's likely off-limits for jailbroken iPhones as well.
As for your question where the limitations are: I couldn't find any technical specifications on the color temperature range on this, the general number tossed around is that it's capable of producing over 1000 different ones without giving specific temperature numbers.

The iPhone 6 True Tone flash does not have one fixed color temperature per LED in normal use. Instead, the phone uses both LEDs together and adjusts their mix algorithmically to better match the ambient light. Based on the community answer, Apple did not publish a specific Kelvin range for the two LEDs, so there is no confirmed official number for their exact color temperatures or full adjustment range. A commonly cited claim is that it can produce many different color blends, but without precise temperature specs. In practice, that means the flash is designed to approximate surrounding light rather than give you manual control over a defined Kelvin setting. So yes, some unusual light sources could fall outside what it can closely match, but the exact limits are not documented in the provided information.
