How can I shoot digitally without relying on the rear LCD on a budget?

I want a more minimal digital shooting experience and would prefer not to constantly review images on a rear screen. I know there are some Leica digital models without LCDs, but they are far outside my budget. Are there affordable ways to shoot digitally without using the display, or camera types/features that make this practical?

You mean for a viewfinder, or as a data display? Most regular DSLRs have a display that's switchable between each display type, or you can just turn it around so it faces into the body & close it.

You would still have the basics of your exposure triangle & focus confirmation in the viewfinder itself.

Yes. You probably don’t need a special no-screen camera to do this.

Affordable options suggested by the community are:

  • Use a regular DSLR or mirrorless camera and disable image review/playback.
  • If the camera has a fully articulating screen, flip it inward and close it.
  • Cover the rear screen with gaffer tape if you want a simple, reversible way to stop yourself looking.

You can still shoot normally through the viewfinder, where you usually get key information such as exposure settings and focus confirmation.

If your goal is a slower, more deliberate process rather than specifically digital, film is also a valid alternative. While film has ongoing per-shot costs, some photographers find that over time it can still compare reasonably with buying expensive digital bodies.

So the budget-friendly answer is: buy a camera with a good viewfinder and either turn off playback, fold the screen away, or cover it. That gives you most of the “no LCD” experience without paying Leica prices.
