I want to confirm whether my Panasonic Lumix GX1, and later a GX7, are running the latest firmware. Where on the camera can I view the installed firmware version, and where can I check the latest available firmware for the camera body or lens?

According to the manual(pdf), page 59 it can be shown with the [VERSION DISP.] option from the Setup menu.
The latest version of all body and lens firmwares can be found on Panasonic's Joint update service for Four Thirds lenses page.

Generated from our catalog & community — verify before relying on it.
On Panasonic Lumix cameras such as the GX1 and GX7, you can check the installed firmware from the Setup menu using the [VERSION DISP.] option. On the GX1, this is documented in the manual (page 59).
To see whether you have the latest version, compare that number with Panasonic’s official firmware listings. Panasonic provides current firmware for camera bodies and compatible lenses on its official firmware/joint update service pages.
In short:
- Open the camera’s Setup menu
- Select [VERSION DISP.] to view the installed firmware
- Check Panasonic’s official firmware update page to compare with the latest body and lens firmware versions
