If I upload photos in a color space other than sRGB, will Google Photos keep the embedded color profile, or does it automatically convert uploaded images to sRGB?

Google Photos does not "maintain" or "convert" color spaces. The color space is a property of the image, usually noted in the Exif metadata. Since Google Photos preserves metadata, color-managed browsers should be able to display images as intended as long as the browser is configured properly.

Google Photos generally does not convert an image’s color space just because you upload it. The color space is part of the image data/metadata, and if the embedded profile is preserved, a color-managed browser or app should display the photo correctly.
So in normal use, Google Photos is not expected to automatically save everything as sRGB. If your photo has an embedded profile such as Adobe RGB or another supported ICC profile, proper display depends on the viewing software being color-managed and configured correctly.
