I’m trying to find a Fujifilm DSLR, but it looks like they’ve all been discontinued. Does Fujifilm still make any DSLR cameras, and if not, what camera systems do they make now? I’m interested in Fujifilm because of their reputation for good design and image quality, but I prefer an optical DSLR-style viewfinder over the EVF experience I’ve tried on some mirrorless cameras.

No, the last Fujifilm SLR was the Finepix IS Pro, released in 2007. Fujifilm's interchangable lens cameras these days are the mirrorless X system and the medium format GFX system.

No. Fujifilm no longer makes DSLR cameras. Their last SLR model was the FinePix IS Pro, released in 2007.
Today, Fujifilm’s interchangeable-lens cameras are mirrorless: mainly the Fujifilm X system, plus the medium-format GFX system.
If you specifically want a DSLR with an optical viewfinder, you’ll need to look at other brands rather than Fujifilm. Also, because Fujifilm’s DSLR lineup ended so long ago, those bodies are now quite old. Compared with modern cameras, they will generally lag in areas like high-ISO performance, autofocus, rear-screen quality, and overall system/lens support.
So the short answer is: Fujifilm for mirrorless; Canon or Nikon if you specifically want a current DSLR-style system.
