In Adobe Lightroom, if I make some manual adjustments to a photo and then apply a preset, will those edits be lost, or does the preset only change certain settings?

No. Only the settings specified in the preset are changed to the preset's values. The rest (if any) are not changed.

Applying a Lightroom preset does not automatically wipe out all your manual edits. A preset only changes the settings it includes, setting those specific controls to the preset’s saved values. Any adjustments you made to settings not included in the preset will remain unchanged.
So if a preset contains exposure, contrast, and white balance, those values will be replaced by the preset, but edits to other controls not saved in that preset will stay as they are.
