I'm comparing cameras that don't fit neatly into the same category, and I'm unsure how important a viewfinder really is. One option I'm considering is the Sony A5000, which has good specs but no built-in viewfinder. Another is the Panasonic Lumix DMC-ZS50, which does have one. For everyday shooting, how essential is a viewfinder on a compact or mirrorless camera, and when does it matter most?

It might depend on who you ask. To the vast majority of buyers of such cameras it must not be essential because pretty much all current compacts on the market do not have a viewfinder.
As far as your purchase is concerned the question should be, "Is the viewfinder absolutely essential to me?"
