I’m collaborating with another editor in Lightroom and want us to use the same catalog from two different computers. Can we both open the catalog simultaneously, make edits, and have the changes sync between our computers? If not, what’s the practical workaround for sharing work?

No, because of the internal database you can't really just merge the libraries.
If you can export parts of the library and re-integrate that, it would be the way to go.

No. A Lightroom catalog is a database, so two users can’t reliably open and edit the same catalog at the same time and then merge those changes automatically.
The practical workaround is to split the work into parts, then export and re-import those parts. In Lightroom terms, that usually means exporting selected images or a portion of the catalog for the other person to edit, then bringing those changes back into the main catalog afterward.
So: simultaneous editing in one shared catalog is not the right workflow; exchanging exported subsets of the catalog is the safer approach.
