I often have many panorama or HDR merges to process in Lightroom, and each merge makes my computer hard to use until it finishes. Is there a way to queue multiple panorama/HDR stitches and let them run later, such as overnight, instead of starting each one manually while I’m at the computer?

Unfortunately you are not alone with this problem. You can check here and here about discussions/requests for such option. What you can try is to activate graphical processor to help with rendering the panorama. Also you can check those recommendations from Adobe about Lightroom optimization

EDIT: According to this document now is possible to run panoramas/HDR stitch in batch. Probably it is not what you want but at least IMHO is step in right direction
