I have a Mamiya 7II and want to fire a flash off-camera on a light stand with an umbrella, using manual flash only. The camera’s hot shoe has just a single center contact, so I know TTL features won’t be available. Will a Yongnuo YN-560 III work for this setup, and if so, which Yongnuo transmitter is compatible?

Yes. A Mamiya 7II can trigger a Yongnuo YN-560 III off-camera in manual mode. The single-contact hot shoe is fine for this because it only needs to send a basic fire signal; it just means no TTL or other dedicated hot-shoe communication.
A YN-560TX is the most convenient Yongnuo transmitter for this setup, since it works with the YN-560 III and lets you adjust flash power from the camera position. The Canon or Nikon version should still work here because you’re only using the center pin/manual trigger function.
The YN-560 III’s built-in receiver is also compatible with Yongnuo RF-602, RF-603, RF-603II, and RF-605 triggers. Those can fire the flash, but the YN-560TX is the best match if you want remote control of settings as well as triggering.
