I have a Cosina AF 28-300mm f/4-6.3 for Nikon F mount that normally relies on the camera body’s autofocus motor. Since the Nikon D5100 does not have an in-body AF motor, can I still mount and use this lens if I focus manually?

Yes. As you say, the lack of AF motor in the D5100 body means you will have to manually focus, but the lens will otherwise function just fine.
